Ingredients:
100g dried apricot chopped
(i soaked a few minutes with hot water then wipe with tissue) }*
80g roasted cashew nuts roughly chopped
(i used almond/cashew nuts and groundnuts) }*
100g marie biscuits, blend into fine crumbs
(i used coffee marie biscuits) }* *A
50g melted butter
250g cooking chocolate chopped
(i used bitter sweet chocolate)
100g roasted desiccated coconut
(i used nestum)
Method:
Mix *A in a mixing bowl, stir well.
Melt chocolate in saucepan over simmering water, pour into *A and mix thoroughly.
Roll mixture into small balls, toss in roasted desiccated coconut/nestum, place in paper cups.
Keep in refrigerator.
