Rojak Melaka



























Recipe sourced: Chef Ricky
Ingredients A:
1 cup water
250g gula Melaka (palm sugar, chopped)
200g sugar
1 cup fried Plain Flour

Ingredients B:
2 tbsp tamarind paste
2 tbsp lime juice
1 tbsp ground toasted shrimp paste
3 red chilies (blended)
2 tbsp thick soy sauce

Ingredients C (Condiments):
Jicama (Sengkuang/Bangkuang) * *sliced
Cucumber *
Pineapple *
Green Mango *
Blanced Kangkung ~ i omitted
Blanched Bean sprouts ~ i omitted

Topping:
Some Groundnuts toasted
Some Sesame seeds toasted ~ i added

Method:
Rojak sauce:
Combine ingredients A (accept fried plain flour) in a saucepan and simmer over low heat till the sugar is completely dissolved and thickens slightly. Turn off the heat.
Stir in fried flour and stir quickly till the syrup is well combined, Strain.
Add ingredients B and mix well.
To serve: combine condiments and some Rojak Sauce in a mixing bowl and toss well.
Sprinkle ground toasted peanut on top.
