Salad Buah-Buahan















Bahan-bahan:
Basil leaves
1 biji oren
1 biji tomato
1 biji pink epal
1/2 biji carrot
4 biji timun kecil crunchy
Buah anggur ikut suka
1 biji kiwi

Bahan-bahan sos, digaul rata:
Mayonnis
Olive oil
Lada hitam
Serbuk buah pala secubit
Sedikit All-Spice
Garam sedikit

Caranya:
Potong buah-buahan ikut suka, gaulkan dengan bahan sos dan simpan di peti sejuk sebentar.
Keluarkan dari peti sejuk, gaul rata, Bolehlah dihidangkan.


Root Beer Float Ice Cream Bars

Serves: 6 bars
Ingredients:
1/4 cup whole milk
1 1/2 tablespoons granulated sugar (original 2 tablespoons)
1/2 cup heavy whipping cream
Pinch of salt
1 egg yolk
1/4 teaspoon vanilla extract
1 cup root beer

Method:
In a medium saucepan, whisk together the milk, sugar, 1/4 cup heavy cream and salt.
Warm until it starts to boil.
In a small bowl, lightly beat the egg yolk.
Pour in some of the milk mixture then pour it all back into the saucepan.
Bring to a boil and cook until the custard thickens and coats the back of a spoon.
Remove from the heat and whisk in the vanilla, remaining 1/4 cup cream and root beer.
Pour into molds and freeze for at least 4 hours or overnight.

Notes:
If you want to skip the molds, freeze according to your ice-cream maker or freeze by hand.

Chapati Rolls Dengan Hot Dogs


















Bahan-bahan untuk Chapati:
Tepung atta
Garam sedikit
1 sudu besar butter / margerine / minyak sapi / minyak sayuran
Air susu + air, dipanaskan suam-suam

Caranya:
Masukkan tepung atta di dalam mangkuk besar. Masukkan garam digaul sebati.
Masukkan butter dan gaul sehingga menjadi seperti serbuk roti.
Masukkan air susu sedikit demi sedikit sehingga boleh diuli, uli sehingga menjadi licin dan lembut, ketepikan.
Setelah direhatkan selama 30 minit, uli sedikit dan ambil sedikit doh dijadikan dalam sebesar bola ping pong.
Taburkan sedikit tepung atta pada papan canai dan gelekkan.
Sapukan sedikit butter pada non-stick chapati pan dan masak chapati +- 2-3 minit, jangan terlalu lama.
Kalau timbul gelembung pada permukaan chapati tekan sedikit dengan jari, dibalikkan dan masak sebentar, angkat dan tutup dengan kain bersih.

Untuk isian:
Hot Dog, dipotong kiub
Bawang besar dihiris
Bawang putih dicincang
Jagung
Carrot
Sedikit minyak untuk menumis
Sedikit air
Garam jika perlu, tak letak

Untuk sos dikacau rata:
Sos cili sriracha
Sos cili maggi
Sos tomato
Paprika sedikit
Lada sedikit

Bahan sampingan:
Bawang merah dihiris dan dikaramelkan
Timum crunchy

Caranya:
Masukkan minyak sedikit, masukkan hot dogs lalu digoreng sebentar.
Masukkan bawang besar, bawang putih dan tumis sehingga layu, masukkan jagung, carrot dan air sedikit, masak sehingga carrot empuk.
Masukkan bahan sos dan masak sehingga pekat, angkat dan sejukkan sebentar sebelum di isi pada chapati.




Kurma Harum Ala Mamak

Bahan-bahan:
Ayam 
Daging - tak letak
1 Biji Telur, rebus dan goreng kekuningan - tak letak
1 peket rempah kurma ADABI, dicampur dengan sedikit air menjadi pes
2 ulas bawang putih*
5 biji bawang mearh*
2" halia* bahan bertanda * dikisar
rempah 4sekawan i.e. kayu manis, cengkih, biji pala dan bunga lawang
1/2 sudu teh serbuk kas-kas, ditumbuk
1/2 sudu teh bijan,  ditumbuk
1 batang serai, dititik
1/2 cawan santan pekat / susu cair
2 sudu besar yogurt / tairu
1 biji bawang besar, dihiris bulat
2 biji ubi kentang, dipotong ikut suka
5 biji tomato ceri @ tomato biasa
1 biji cili hijau
1 kiub pati ayam
Garam secukup rasa
Minyak untuk menumis
Air secukupnya
Daun pudina / Daun Kari / Daun Pandan

Caranya:
Tumis bahan kisar, pes kurma, rempah 4sekawan, serai, daun pudina, daun pandan, daun kari sehingga pecah minyak dan naik bau.
Masukkan daging, kentang dan sedikit air biarkan hingga empuk.
Masukkan bijan tumbuk, serbuk kas-kas, yogurt, santan, kiub pati ayam, biar mendidih dan pecah minyak.Setelah itu masukkan tomato ceri, cili hijau dan bawang besar, setelah layu sedikit, perasakan dengan garam dan bolehlah dihidangkan bersama nasi minyak@nasi putih.
Nota: Kalau nak pekat masukkan air sedikit saja. 


Steamed Chicken Buns

Ingredients for Fillings:
2 tbsp vegetable oil
2 cloves garlic
1 onion, finely diced
1 small carrot finely diced
8 oz (225g) roasted chicken breast, cubed
2 tbsp hoisin sauce
1 tbsp dark soy sauce
1/2 cup frozen green peas
1 tsp cornstarch mix with 2 tbsp water
2 green onion (spring onion), finely sliced

Method for Fillings:
Heat vegetable oil in a medium size pan.
Saute garlic, onion and carrot for 2 minutes.  Add roasted chicken and fry for another 3 minutes.
Add hoisin sauce, dark soy sauce and 1/2 cup (120ml) water.
When liquid comes to a boil, reduce heat and simmer for 3 minutes.  Add frozen green peas and continue to cook for another 3 minutes.
Pour in cornstarch mixture.  When sauce thickens, turn off heat.  Mix in sliced green onions.
Set aside and allow filling to cool.

Dough:
3 cups / 400g bao flour or all-purpose flour
3 tablespoons powdered sugar
1/2 tsp salt
2 tsp baking powder
2 tsp dry yeast granules
1 cup (240ml) warm water, about 110F (43C)
3 tbsp vegetable oil

Method for Dough:
Sift flour, powdered sugar, salt and baking powder into a large bowl.
Make a well in the middle.  Fill well with warm water and yeast.  Gently stir the water with a spatula to dissolve the yeast.
Then mix in flour to form a soft dough.  With clean hands, knead dough in the bowl for about 5 minutes.
Cover bowl with plastic wrap and allow it to rest for 10 minutes.
Add vegetable oil and knead to get oil incorporated into dough.  Remove from bowl and continue to knead on a flat surface for another 8 to 10 minutes until dough is nice and smooth.
Put dough back into the bowl and cover with plastic wrap.  Allow dough to rise in a warm place for 1 to 1 1/2 hours or until double in size.
Prepare 12 pieces of 2 x 2" wax paper on a large platter.
When dough is ready, remove from bowl.  Gently punch down and cut into 12 equal portions.
Roll a portion of dough in the palm of your hands to form a ball.
Flatten the ball into a disk of about 3" in diameter with a slightly thicker center and tapered edges.
Add a rounded tablespoon of filling in the middle of dough.
Gather and pleat the edges.  Then pinch and twist to seal.
Place seam side up onto wax paper.  Repeat with remaining dough.  Cover with tea towel and allow prepared buns to rest and rise for another 15 minutes.
Prepare a steamer and allow water to come to a boil.  Place buns in steamer, cover with lid and steam for 12 minutes.
Remove lid carefully to avoid water from dripping onto buns.  Steam in 2 batches if necessary.
Serve immediately.
Notes:  Leftover buns may be kept in the freezer.  When ready to eat, re-steam frozen buns for 8 to 10 minutes.

Chocolate Chip Cookies

Makes about 2 1/2 to 3 dozen cookies
Ingredients
1/2 cup butter, softened
1/2 cup shortening
1/4 cup granulated sugar
1/4 cup brown sugar
1 tablespoon vanilla
2 eggs ( C grade )
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate morsels or mint chocolate 

Method:
Preheat oven to 375F / 190C.
Using a mixer in a large bowl, combine butter and shortening until blended.
Beat in sugar and brown sugar until creamy.
Add eggs, one at a time and vanilla, beating well after each addition.
Combine flour, baking soda and salt in a medium bowl.
Add to creamed mixture and beat until just blended.
Stir in semisweet morsels until well blended.
Using a cooking scoop, drop onto a cookie sheet that has been lined with parchment paper.
Bake for 9 to 11 minutes or until golden.
Allow to cool on cookie sheet one minute and then remove to a wire rack to cool completely.
Note: If desired add 1 cup chopped nuts to batter when add semisweet morsel.
