Makes about 22 muffins
Ingredients:
2 cup flour*
1 tbsp baking powder*
1 tsp baking soda* (* sifted together)
1 cup sugar ( I used less than 1 cup and mixed with brown sugar and castor sugar )
3 firm Kiwi Fruit - peeled and finely chopped
2 eggs **
3/4 cup Oil **
3/4 cup Milk ** (** combined) i used low fat milk
Method:
Place flour mixture* in a bowl.
Add in sugar and chopped kiwi.
Gently stir in egg mixture** until just moistened - do not overmix.
Spoon into muffin cups until 2/3 full.
Bake 180C for 20 minutes or until golden.
Cool on wire racks.

Greek Yoghurt Chocolate Chip Muffins

Use one regular size muffin pan (12 muffins)
Makes 12-14 regular size muffins
Ingredients:
2 cups all purpose flour
1 cup white sugar (granulated sugar), i used less than 1 cup removed about 10 tablespoons
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup vegetable oil
2 eggs
2/3 cup Greek Yoghurt (Plain)
1 cup Chocolate Chips Semi Sweet
Method:
Preheat oven to 400 degrees Fahrenheit (200C). Line Muffin cups with muffin liners.
In a medium bowl, mix together flour, white sugar, salt and baking powder.
In a separate large bowl, add vegetable oil, 2 eggs and Greek Yoghurt and whisk to combine.
Add flour mixture from step 2 to the liquid mixture in step 3 and mix just enough to combine.
Fold in the chocolate chips into the batter from step 4.
Fill muffin cups with the muffin batter about 3/4 full.
Bake for about 20 minutes in the oven, or until toothpick inserted in the center of the muffin comes out clean.

Chocolate Chip Raisin Muffin

Bahan-bahan kering: ( Kim menggayak sebanyak 3x )
220g tepung gandum / tepung protein sedang
40g serbuk coklat
1 sudu makan baking powder
200g gula halus ( Kim guna 170g )
1 sudu teh garam
Bahan- bahan basah:
2 biji telur ( Kim guna gred C )
120g susu ( Kim guna fresh milk )
60g vegetable oil ( Kim guna corn oil )
Bahan isi:
100g coklat chips ( Kim guna 50g )
100g kismis / raisins ( Kim guna 50g )
Caranya:
Panaskan oven ke 170C.
Ayak bahan-bahan kering tepung, baking powder, gula halus dan garam sebanyak 3 kali. Ketepikan.
Di bekas lain campurkan bahan-bahan basah telur, susu dan minyak. Kacaukan
Masukkan campuran telur, susu dan minyak ke dalam campuran bahan-bahan kering. Kacau rata sehingga campuran adunan rata. Jangan dikacau terlalu lama, sebentar saja dah memandai.
Masukkan bahan isi ke dalam adunan, kacau hingga rata.
Tuangkan adunan ke cawan muffin yang sudah disapukan mentega dan ditaburi tepung.
Bakar selama 20 - 25 minit.
Muffin coklat yang kaya dengan rasa coklatnya, lebih2 lagi dimasukkan coklat chips ke dalam muffin.
Cubalah tak mengecewakan bagi penggemar coklat. Tak perlu menggunakan mixer hanya menggunakan kudrat tangan ......

Muffin Vanilla Kismis
Resipi: Ricke Indriani (Just My Ordinary Kitchen)
Yang telah diterjemah ke bahasa melayu oleh Kim
Mintak halal kan ya
Bahan-bahan:-
200gm tepung gandum (tepung protein sedang / all purpose flour)
1 sudu makan baking powder
1/2 sudu teh baking soda (optional, jika ditambah akan lebih mengembang muffinnya)
125gm gula halus ( Kim guna 100gm gula halus )
100gm margerin, cairkan (boleh jugak menggunakan butter supaya lebih sedap)
1/4 sudu teh essence vanilla/paste vanilla
1 biji telur, dipukul lepas
150ml susu cair tawar
50gm chocolate chips (boleh digantikan dengan kismis, keju etc - Kim guna 100gm kismis)
Caranya:-
Campurkan bahan-bahan kering tepung gandum, gula halus, baking powder dan baking soda dan chocochips/kismis. Kacau rata dalam bekas yang besar.
Dalam bekas yang lain, campurkan bahan basah, margerin/butter cair, essence vanilla, telur dan susu cair.
Kacau rata.
Tuangkan ke campuran bahan kering tadi (campuran tepung).
Kacau rata dengan whisker atau spatula dengan beberapa kali adun saja. (Kim adun sebanyak 3 kali aje).
Cukup sampai campuran tepungnya moist dan adunan bertekstur "lumpy".
Tuangkan ke paper cup muffin setinggi 1/2 cup saja kerana adunan akan mengembang.
Taburi bahagian atas muffin dengan baki chocochips/kismis.
Bakar pada suhu 160C selama 20-30 minit bergantung kepada oven masing-masing.
Lebih sedap dihidangkan semasa hangat.
Tips oleh Ricke Indriani:
Pada saat mencampur bahan-bahan basah dan bahan kering adun adonan dengan whisker atau spatula karet dalam beberapa adukan saja sampai adonan tepungnya moist dan bertekstur "lumpy"/kayak lumpur). Mungkin akan terlihat adonan tidak halus dan banyak gumpalan-gumpalan, tapi biarkan saja kerana ini yang akan membentuk tekstur muffin.
Jangan diaduk terlalu lama kerana akan menyebabkan hasil akhir muffin menjadi keras (kata-kata dari master muffin, Mba Vania).
Panggang muffin dengan suhu oven yang cukup panas (sekitar 160-200 deg Celcius) agar muffin bisa menggembang dengan baik.
Jangan lupa untuk memanaskan oven selagi kita membuat adonannya ya.
Muffin ini aku isi pake keju cheddar yang dipotong dadu truz atasnya ditaburi chocochips. Jadi gurih di dalam tapi teuteup ada coklatnya. Dasar maniak coklat!

Muffin Pisang Inti Coklat

Bahan-bahan:
2 cawan tepung gandum
1 1/3 cawan gula ( Kim jugak guna 1/2 cawan gula )
2 biji pisang yang ranum ( Kim jugak guna 200gm )
1/2 cawan minyak masak ( Kim guna Minyak Jagung )
2 biji telur ( Kim guna gred C )
1/3 cawan susu segar
1 sudu teh soda bikarbonate ( Lain kali Kim nak letak 1/2 sudu teh saja )
1 1/2 sudu teh baking powder
Beberapa titik esen vanila
Beberapa ketul coklat dairy milk ( Kim jugak guna coklat chips )
Caranya:
Hancurkan pisang dengan menggunakan gelas dan letakkan 1/2 sudu teh garam.
Ayak tepung gandum bersama baking powder dan soda bikarbonat, kemudian pukul telur hingga berbuih baru dimasukkan gula, pukul lagi hingga kembang.
Selepas itu, masukkan pisang dan kacau sebati, kemudian masukkan minyak dan tepung sedikit demi sedikit, titikkan beberapa esen vanila, akhir sekali masukkan susu segar, masa ini jangan guna mixer ye, guna spatula atau senduk kayu je.
Cedokkan adunan tadi didalam papercup muffin (isikan 3/4 adunan kepaper cup) dan letakkan coklat di tengahnya, bakar pada suhu 170C selama 18 ke 25 minit.
Sejukkan atas redai dan tabur sedikit dengan sugar powder. Sedia untuk dihidangkan

Mini Chocolate Chip Muffins
Recipe: Diana's Recipe Book
Ingredients:-
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons unsalted butter, softened ( Kim used buttercup )
1/2 cup granulated sugar ( Kim used 1/4 cup )
1 large egg
1 teaspoon vanilla extract
1/4 cup sour cream
2 tablespoons buttermilk (if buttermilk is unavailable, you may use regular whole milk ( Kim used low-fat milk )
1/2 cup semisweet miniature chocolate chips
Instruction:
Preheat oven to 350F / 180C. Line a mini muffin pan with 18 (1 3/4 inch) mini muffin cup liners.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt, set aside.
In bowl of an electric mixer, beat the butter and sugar until light and fluffy. Add the egg and vanilla, and beat to combine.
Add the dry ingredients, alternating with the sour cream and buttermilk and beginning and ending with the dry ingredients; scrape down the bowl as necessary.
By hand, gently stir in the chocolate chips.
Divide batter evenly between lined muffin cups. Bake until a cake tester inserted in the center comes out clean, about 15 minutes.
Let stand in pans for 5 minutes. Removes to wire racks to cool completely.
(Makes 2 dozen mini muffins)

Nigella Chocolate Chip Muffin
Makes 12 muffins
Ingredients:
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons best quality cocoa powder (Kim used dark cocoa powder)
3/4 cup superfine sugar (Kim used icing sugar 1/2 cup less a little bit) 3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
1 cup milk (Kim used Low Fat)
1/3 cup plus 2 teaspoons vegetable oil (Kim used corn oil)
1 egg (Kim used 1 egg size C)
1 teaspoon pure vanilla extract
Preheat the oven to 170C degree.
Method:
Put the flour, baking powder, baking soda, cocoa, sugar adn 3/4 cup of the chocolate chips into a large bowl.
Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that A LUMPY BATTER MAKES THE BEST MUFFINS.
Spoon into the prepared muffin cases.
Spinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen dan springy.
