Balinese Grilled Fish

Ingredients:-
1 large / 2 medium sized whole fish (about 600g) either Snapper, Tilapia, Seabass, Yellow Tail or Squid / Prawns
Juice from 1 lime
Marinade:
3 candlenuts
4 shallots
3 garlic cloves
10 chili padi ~ i added
1 tbsp turmeric powder
1 tsp coriander powder
2 tsp salt
2 tbsp vegetable or canola oil
Basting sauce:
1/4 cup (60ml) kecap manis
1 tbsp (15g) butter or margarine, melted
2 tbsp vegetable or canola oil
Method:
Clean and pat dry the fish with paper towels. Use a sharp knife and make a few deep scores on the both sides of the fish.
Spread the lime juice all over the fish to get rid of the fishy smell.
Using a mortar and pestle or grinder, pound all the marinade spices together and mix in the oil.
The candlenuts act as a binder for the marinade.
Spread the marinade all over the fish (both sides) making sure to go in between the scored marks.
Cover and let them hang out in the fridge for at least 1 hour.
Heat up your griddle or grill pan. Add some oil to make sure to prevent the fish from sticking.
Gently put in the fish and grill until cooked.
Different fish vary in different sizes so cooking time might differ.
Avoid flipping them over too soon and too many times to prevent sticking.
When the fish is about done, brush the sweet sauce all over the fish and continue to cook for another minute.
Serve warm with your favorite sambal sauce or traditional sambal matah.
Sambal matah:
2 shallots
2 red chilies
1 stalk lemongrass
1/2 tsp shrimp paste (lightly toasted in pan)
4 tbsp vegetable or canola oil
pinch of salt to taste
Method:-
Chop all the ingredients finely and mix together with oil.
Season with salt and let it marinate for at least 10 minutes before serving.

Ayam Panggang Dengan Glis Oren Halia
Sumber resipi: The Meatmen
Bahan-bahan A:-
1 ekor ayam, saya guna peha ayam
1 daun limau purut dihiris halus
1 biji lemon, diparut kulit dan hiriskan
1 tbsp halia diparut
1 tbsp kicap cair
Bahan-bahan B (glis):
1/2 cawan 100% jus oren tanpa gula
3 tbsp minyak zaitun
2 tbsp kicap cair
2 tbsp parutan halia
3 tbsp madu
1 tsp lada hitam tumbuk
Caranya:
Masukkan bahan-bahan A iaitu daun limau purut, parutan kulit lemon, halia dan kicap cair ke dalam mangkuk, kacau sebatikan.
Masukkan bahan-bahan yang telah digaul ke dalam perut ayam bersama hirisan lemon dan ketepikan. Sediakan bahan-bahan glis.
Sapukan 1/4 glis pada permukaan ayam dan panggang pada suhu 160C.
Setiap 15 minit sapukan glis pada ayam, panggang sehingga masak.
Lebihan sos glis, masukkan dalam kuali dan masak sehingga pekat. Angkat dan hidangkan.

Ayam Kunyit Serai
Ayam dipotong kecil, gaulkan dengan sedikit serbuk kunyit
Serai dihiris halus
Daun limau purut dihiris
Bawang putih dicincang
Cili Capsicum dipotong kecil
Sedikit minyak
Sedikit air
Garam secukupnya
Bahan-bahan tumbuk kasar:-
Cili merah
Cili padi hijau/merah
Caranya:-
Masukkan minyak dikuali, tumiskan bawang putih dan halia sehingga layu sedikit.
Masukkan cili yang ditumbuk kasar, kacau sehingga cili masak.
Masukkan ayam dan kacau rata, masukkan sedikit air dan serai.
Masak sehingga ayam bertukar warna dan sedikit empuk bolehlah dimasukkan garam.
Kacau sekali sekala sehingga ayam masak sepenuhnya.
Bila ayam hampir nak masak, masukkan daun limau purut dan cili capsicum.
Angkat dan hidangkan bersama nasi putih.
Bebola Ayam Sumbat Keju
Isi ayam dicincang
Serbuk cili
Garam
Serbuk pati ayam
1 biji telur dipukul sedikit
Breadcrumbs
Serbuk lada hitam
Mozzarella cheese dipotong kiub
Minyak menggoreng secukupnya
Caranya:
Masukkan cincangan ayam ke dalam mangkuk besar.
Masukkan serbuk cili, garam, serbuk lada hitam dan serbuk pati ayam, gaul sebati.
Masukkan telur dan breadcrumbs, gaul sebati.
Rehatkan doh dipetisejuk +/- 30 minit.
Setelah dikeluarkan dari peti sejuk, bentuk doh menjadi bebola yang kecil, tekan dengan jari dibahagian tengah, sumbatkan Mozzarella cheese dan tutup kemas.
Buat sehingga habis.
Panaskan minyak dikuali dengan suhu yang sederhana, gorengkan bebola ayam sehingga kekuningan.
Angkat dan toskan minyak.
Hidangkan panas-panas dengan sos cili jika suka.
