Steamed Garoupa In Plum Sauce

Ingredients:
1 garoupa fish (about 600gm), cleaned, drained and buttefrly cut

Sauce:
3 wet plums, seeded and  mashed
2 tbsp plum sauce
1 tbsp sugar ~ brown sugar
1/2 tsp chicken stock granules
1/2 tbsp cornstarch (next time to omit and replaced light soya sauce)
Some coriander leaves and spring onions cut into short lengths

Method:
Combine the sauce ingredients and rub over the fish.  Marinate for 30 minutes.
Place the fish in a steaming platter and raise up the chopsticks.
Steam over high heat for 12 - 15 minutes or until cooked (chopstick can poke through easily).
Take fish out from steamer and remove the chopsticks.
Sprinkle coriander and spring onion on top.
Serve.
