Ingredient A:-
1/2 chicken
Sufficient oil for deep frying
Ingredients B, mixed well:-
3 pcs red fermented bean curd / Nam Yee
1 tbsp sugar ~ omitted
1 tbsp light soy sauce
a drop of dark caramel sauce ~ i added
1 tbsp Huadiao wine ~ omitted
Marinade B, pounded for juice:-
1 clove garlic
5 - 6 shallots
1 pc (3cm) ginger
Method:
Wash chicken and chop into pieces.
Mix chicken with marinade A and marinade B. Set aside for at least 1 hour.
Heat 1/2 pot of oil and add chicken.
Switch to low heat and deep fry until cooked.
