Cowboy Cookies

Ingredients:
1 cup butter
1/4 cup brown sugar (originally 1 cup)
2 eggs
2 tsp vanilla extract
2 cup flour
1 tsp baking soda
1/2 tsp baking powder
2 cup rolled oats
6 oz. semis-sweet chocolate chips
1/2 cup sweetened shredded coconut
1/4 cup sprinkles
Method:
Preheat oven to 160C.
In a large bowl, combine butter, brown sugar, eggs and vanilla.
In a separate bowl, sift together flour, baking soda and baking powder.
Add the dry ingredients to the butter mixture in batches, mixing well after each addition.
Stir in oats, chocolate chips and shredded coconut. Carefully fold in sprinkles.
rop rounded tablespoons of cookie dough at least 2" apart on an ungreased baking sheet.
Bake 12 to 15 minutes or until lightly golden around the edges.
Cool 5 minutes on cookie sheet before transferring to a cooling rack.
Cool completely.
Condensed Milk Biscuits

(Some changes by me on the amount of sugars)
Ingredients:
180g butter, softened
1/3 cup castor sugar (I used less than 1/3 cup removed about 5 tablespoons)
120ml condensed milk (original 125ml)
1 3/4 cup self raising flour (or plain flour mixed with 1/4 teaspoon salt and 21/2 teaspoons baking powder)
1 cup chocolate chips (Optional) - (I used raisins and semi-sweet chocolate chips)
Method:
Using electric beaters, mix together the butter and sugar until fluffy. Pour in the condensed milk and continue to beat for a further 30 seconds.
Tip in the flour and keep beating until it's all thoroughly combined.
Finally, stir through the chocolate chips & raisins.
Heat the oven to 180C. Scoop about half a tablespoon of mixture onto a lined tray, leaving around 2 cm between each biscuit.
Flatten them just slightly before popping the tray in the oven for 15 minutes to bake.
Cool for a couple of minutes on the tray before transferring to a wire rack to cool completely.

Roti Paun Nekma

Bahan-bahan 2 - 3 loyang sederhana
1 sudu kecil yis kalau nak cepat naik taruk 2 - 2/12 sudu kecil
1 cawan air suam
1/2 cawan gula - boleh kurangkan dan campur susu pekat
1/2 cawan margerin/butter
Tepung gandum bergantung di taruk masa menguli
Sedikit minyak untuk dilenserkan diatas roti
Caranya:
1 cawan air suam dicampurkan yis biarkan seketika hingga larut. Sediakan besen tarukkan sedikit gandum lebih kurang 1/2 cawan kedalamnya.
Kemudian masukkan air suam yang bercampur yis tadi ke dalam besen yang berisi tepung gandum.
Kemudian masukkan pula gula kacau hingga gula hancur. Kemudian masukkan marjerin/butter kedalamnya kacau sampai sebati.
Sesudah itu di letak sedikit demi sedikit tepung gandum di adun sampai boleh diuli.
Jangan diisi terlampau banyak tepung takut jadi keras.
Cuma agak-agak boleh diuli dengan tangan dan tidak melekat ditangan sahaja sampai menjadi doh yang lembut.
Kemudian doh direhatkan sehingga 1/2 - 45 minit hingga naik 2 kali ganda, tumbuk-tumbukkan. Kemudian boleh dibentukkan bulat-bulat dan disusun ke dalam loyang yang telah dialas baking paper.
Dibairkan naik sampai 2 kali ganda lepas itu dilenserkan minyak di atas roti yang dah kembang kemudian bolehlah dibakar dengan kepanasan 180C selama 10 - 15 minit dalam oven yang telah dipanaskan terlebih dahulu.
Spicy Baby Potatoes

Bahan-bahan:
Baby potatoes - rebus hingga empuk dan buangkan kulitnya
Tomato dipotong baji
Daun kari
Cili merah dihiris panjang
Bahan-bahan tumis:
Bawang putih - ditumbuk
Halia - ditumbuk
Biji sawi
Biji jintan putih
Cili tumbuk sedikit * ditumbuk bersama
Bawang merah *
Sedikit garam
Minyak untuk menumis
Sedikit air asam jawa atau perahan lemon
Caranya:
Masukkan minyak, tumiskan biji sawi, jintan putih and daun kari sehingga wangi,
Masukkan cili tumbuk, bawang putih dan halia dan tumis sehingga wangi, masukkan tomato dan air asam jawa jugak garam.
Kacau sehingga rempah masak dan masukkan baby potatoes digaul rata, rasakan garam dan jika perlu boleh masukkan sedikit gula,
Angkat dan hidangkan.
Classic Cheese Pizza

Quantity: Approximately 1 large pizza
For the dough:
1/2 cup warm water
1 1/4 tsp active dry yeast (not instant)
1 1/2 cups flour, plus more for rolling
1 tsp salt
Olive oil for coating bowl
For assembling the pizza:
1/2 to 1 cup tomato sauce
1/2 cup mozzarella cheese, shredded (or more if you like)
Method:
Turn your oven up to 200F (or a warm setting if you have it) for 5 minutes, Then, turn it off.
Add water to large mixing bowl and sprinkle yeast over the top. Let sit for 5 minutes or until foamy.
Add flour, followed by the salt and stir with a wooden spoon until dough beings to come together.
It will look sort of shaggy and rough but that is ok.
Turn dough and any loose bits out onto a lightly floured surface and knead until it comes together and forms a smooth dough, about 5 minutes.

Coat the inside of a large mixing bowl with olive oil and then place dough inside. Cover with plastic wrap and place in your oven (which you heated in step 1) and let rise for 30 minutes or until doubled in size.
Once doubled, remove from bowl and roll dough out into a circular(ish) shape and about 1/2 inch thickness. You'll also want to preheat the oven to 500F once you start prepping the pizza.
Once it's rolled out to your liking, transfer the dough to a baking sheet sprinkled with flour and cornmeal (I sprinkled with olive oil). Top pizza dough with tomato sauce, using as much or as little as you prefer, followed by the mozzarella cheese.
Once oven is preheated, bake pizza for 10 - 12 minutes or until cheese is bubbly and brown in places and the dough seems firm but not hard.
If necessary, stick under broiler for just a bit for 30 seconds for extra browning.
Let cool slightly, then transfer to plate or cutting board and cut into slices and serve.
Kiwi Fruit Muffins

Makes about 22 muffins
Ingredients:
2 cup flour*
1 tbsp baking powder*
1 tsp baking soda* (* sifted together)
1 cup sugar ( I used less than 1 cup and mixed with brown sugar and castor sugar )
3 firm Kiwi Fruit - peeled and finely chopped
2 eggs **
3/4 cup Oil **
3/4 cup Milk ** (** combined) i used low fat milk
Method:
Place flour mixture* in a bowl.
Add in sugar and chopped kiwi.
Gently stir in egg mixture** until just moistened - do not overmix.
Spoon into muffin cups until 2/3 full.
Bake 180C for 20 minutes or until golden.
Cool on wire racks.

Eggless Moist Banana Brownies

Size: 8" square or double portion 10" x 12"
Ingredients:
100g Cooking chocolate
75g Butter
200g Ripe Bananas - mashed
55g Brown Sugar - originally 60g
1/4 tsp Salt
1 tsp Vanilla Essence
75g Plain Flour *
2 tbsp Cocoa Powder *
1/2 tsp Baking Soda *
1/2 tsp Baking Powder * (* sifted together)
Topping : Chocolate Chips any type
Method:
Melt cooking chocolate and butter together. Allow to cool.
Add in mashed banana, sugar, salt and vanilla essence, mix well each addition.
Fold in sifted ingredients *. If too thick, add in 2 tbsp fresh milk.
Pour batter into a greased and lined tin.
Sprinkle some choc chips.
Bake at 160C for 20 - 25 minutes or until done
