Poori/Fried Indian Flatbread with Plain Dhal Curry

Ingredients:
1 cup wheat flour
Salt to taste
1 - 2 tsp vegetable oil
Lukewarm water to knead
Vegetable oil to fry

Method:
Knead flour and salt with water into slightly sticky dough.  Add oil to that and knead it again.
Cover in a air tight container or using a cloth for at least 15 minutes.
Make golf ball sized pieces and shape it round like a ball.
Dip in the flour, and roll to small round.
Heat the oil in wok.
Deep fry poori until slightly brown.  (To puff Poori, press down pooris lightly into the oil when frying).
Drain excessive oil and serve hot with any gravy.

Tip:  Don't let the dough dry it makes poori hard.  If using a presser don't use flour to roll instead use oil.

Plain Dhal Curry

Ingredients:
1/2 cup peeled green beans / small dhal beans
2 shallots*
1 clove garlic*
1 cm ginger*
4 dried chillies* (*sliced)
1 tsp fenugreek
1 sprig curry leaves
1 tsp turmeric powder
Salt
Water

Method:
Wash and boil green bean with 1 cup water, salt, turmeric powder until soften.
Adjust water to preferred consistency.
Heat few tablespoon oil and stir-fry sliced ingredients*, fenugreek, curry leaves until fragrant.
Pour the oil and fried ingredients into boiled dhal and cooked until well mixed.
Serve with chapati / paratha.
