18 Flavour Fried Chicken





Recipe sourced: Chef LJ Loo ~ Budget Meals, Meals For Four
Ingredients A:
1/2 chicken chopped into 9 pieces
100g flour
4 sprigs curry leaves
1 tbsp salt

Ingredients B:
1 tbsp bottled curry powder
1 tsp budu

Marinade:
50g garlic
50g shallots
30g ginger
30g galangal
20g fresh turmeric
10g bird's eye chilies
20 curry leaves
4 kaffir lime leaves
2 laksa leaves (daun kesum)
2 stalks lemongrass
1/2 star anise
1 tsp mustard seeds
1 tsp pepper powder
1/2 tsp cumin

Method:
Blend or pound marinade into a paste.
Combine chicken with salt.
Add marinade and ingredients B, then mix well.
Add crispy flour last and mix well.
Marinate for 8 hours or overnight.
Add curry leaves and mix well.
Heat up oil in a wok and deep-fry chicken over low heat until golden brown.
