Ingredients: To Blend: (A)
3 stalks lemongrass
10 cloves garlic
3cm length ginger
some water
Ingredient: (B)
12 chicken wings
Marinade:
2 tbsps maltose
2 tbsps brown sugar
2 tbsps dark soy sauce
Pinches of salt
Dashes of pepper
5 pieces pandan leaves (cut into part, tighten, as a brush)
Method:
Combine chicken wings with ingredients (A) and marinade, mix well.
Marinate at least 4 hours or overnight.
Pre heat oven to 200C
Place the chicken wings on a baking tray, use the pandan leaves to brush chicken wings with left over marinating juice once and grill for 10 minutes.
turn over the wings, brush with marinating juice and grill for another 10 minutes.
Repeat this method until cooked.
