Croquant Twin Chip Cookies


Recipe: Kadek Kristi Hellen
Ingredients:
125g Low Protein Flour / Cake Flour
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt (omitted)
20g Milk Powder
150g Croquant (not enough i replaced 50g with bubble rice, future can't replaced with others)
200g Unsalted Butter (i used salted butter), Softened
125g Icing Sugar (i used 60g)
2 Eggs Yolks
1 Egg White
50g Twin Chocolate Chip (i used semi sweet chocolate chip)

(My reference; next time to add about a few drops of yellow colour)

Method:
Preheat oven to 140C line the cookies sheets with parchment paper.
Sift together flour, milk powder, baking powder, baking soda and salt in a medium bowl.
Beat the butter, icing sugar until light and fluffy.  Adding egg one at a time; keep beating until batter is smooth.  Stir in flour mixture followed by conquant and chocolate chips.
Drop rounded tablespoonful onto the prepared baking sheets.
Cookies will spread, so allow at least 2" between each cookie.
Bake for around 20 minutes or until cookies are lightly browned around the edges.
Allow to cool on the cookie sheet before removing to wire rack.
To store, keep in an airtight container.
