Vietnamese Spicy Lemongrass Fried Rice Noodles
Ingredients for Spicy Lemongrass paste:
5 fresh lemongrass (use only the white part)
25 dried red chili (reduce for lesser heat, preferable)
1 1/2" ginger root (or can replaced with blue ginger)
8 cloves of garlic
1/2 cup of cooking oil ( or use 1/3 cup for less oil version)
Ingredients:-
Vermicelli, soaked till soft
Prawns, chicken meats or fish cake
Spring Onions
1 or 2 big onions, sliced
1 tbsp curry powder
Fish sauce
Soy sauce
Salt, if needed
Water
Oil
Method:
Put some oil on the pan, stir onion till soft and curry powder, add chicken meats and little water, stir till chicken tender.
Add fish sauce, soy sauce and salt, stir. Add spicy lemongrass paste and water, stir till boil.
Now you can add vermicelli, stir till all are combined.
Before remove from heat, taste first.
