Moist Chocolate Cake

Ingredients:- For cake
1 cup Flour
1 cup Castor Sugar ( Kim take out about 10 tablespoons of castor sugar )
1/3 cup Cocoa Powder
1 tsp Baking Soda
1 Egg
1/2 cup Salted Butter / Oil ( Kim used melted butter )
1/2 cup Buttermilk / Milk ( Kim used Low Fat Milk )
1 tsp Pure Vanilla Extract
1/2 cup Boiling Water

Method:
Preheat the oven at 150C.  Grease a 7 by 11 inch baking dish with butter/shortening.
Mix the flour and baking soda by whisking together in a mixing bowl.
Beat the sugar and butter/oil.  Add the egg and beat well.
Add the milk/buttermilk and cocoa powder and mix everything well.
Add the boiling water and vanilla extract now.
Finally add the flour mixture and mix everything well.
Pour it into the baking dish and bake for about 30-45 minutes or till the cake is done.
Cool on a wire rack and do the topping/frosting.

For Chocolate Ganache - recipe from Alex Goh's Temptation of Chocolate
500g cooking chocolate (finely chopped)
300g heavy cream
30gm butter

Method:
Heat heavy cream until it boils.  Turn off flame.  Add chopped cooking chocolate and stir quickly.
Finally add butter and mix well.  Leave it to cool at room temperature for few hours before use.
You may not chill the ganache, just poured them on the cake whilst still warm.
