Ingredients:
3 tablespoons short grain white rice
1 litre full cream milk
15 ~ 20 raisins
15 ~ 20 strands saffron, optional
1/4 cup dried grated coconut
1/4 cup granulated sugar
1/2 teaspoon cardamom
2 tablespoons silvered almond or cashew nuts
Method:
Wash the rice and soak it with 1/2 cup water for 30 minutes.
Heat milk in heavy bottom pan over medium high heat.
When it comes to a boil, reduce to low heat. Keep stirring while the milk is boiling to avoid scorching.
Drain the rice and add it to a pan along with saffron, raisins and grated dried coconuts.
Cook on low heat until rice is cooked and Kheer is thickened about 45 ~ 50 minutes. Keep stirring while cooking.
Add granulated sugars and cardamon powder and cook for a minute.
Garnis with silvered almond and cashew nuts and serve hot or chilled.
