Ingredient A:
600g large prawns, trimmed and deveined
Ingredients B:
60g butter
4 salted egg yolks, steamed and mashed
1 tbsp chopped garlic
2 tsp black pepper
1 tsp chicken stock powder
Ingredients C:
1 yellow onion, sliced
1/2 tbsp brown sugar
1 tbsp oyster sauce
2 tbsp chili sauce
1/2 tsp salt
100ml water
Method:
Heat sufficient oil in a wok. Add prawns in hot oil and blanch for about 3 minutes (mine is 1 minute, depending how many is your prawns). Drain and set aside.
Heat butter in a wok. Add the rest of ingredients B and stir fry till fragrant.
Add ingredients C (except water) and stir fry well.
Add water and stir well.
Add prawns and stir fry well.
Cook till the gravy thickens.
Serve hot.
